"Xeo" is the sound created by the meeting of batter and the pan. "Banh Xeo" is a creation of the Mekong Delta, widely enjoyed throughout South and Central Vietnam. Traditionally made from rice flour and coconut milk, it owes its yellowish hue to the addition of turmeric.
